Myth : I Do Not Need To Get Off Gluten Because Tests Indicated That I Was Not Sensitive
Gluten is a substance found in wheat, barley, and rye. Gluten is a staple of the Standard Western Diet in North America, Europe, and Australia. It is found in bread, cakes, pastries and most processed foods. People with Hashimotos are more likely to have celiac disease compared to others, and eliminating gluten has helped some people dually diagnosed with celiac and Hashimotos shed their Hashimotos diagnosis . However, celiac disease is not the only problem related to gluten. My personal and clinical experience has shown that non-celiac gluten sensitivity is one of the biggest triggers in Hashimotos.
Lab testing can be very helpful in determining if you are sensitive to gluten, but unfortunately, testing technology is not perfect. More often than not, false negatives can be seen for common reactive foods like gluten, dairy, and soy. The best test for figuring out if you are sensitive to gluten is doing an elimination diet, where you avoid gluten for 2-3 weeks, then try it again to see if you react to it.
Studies have shown that gluten induces intestinal permeability in all individuals, regardless of whether or not they have celiac disease. And we know that intestinal permeability, or leaky gut, is almost always a factor with Hashimotos. Therefore, it only makes sense that eliminating a common irritant like gluten will lead to improved gut health and overall wellness for many people with Hashimotos.
Are There Other Foods To Avoid With Hypothyroidism
Yes. If you have Hashimotos then avoiding anything that causes inflammation or provokes any immune reaction ranging from an allergy to sensitivity or intolerance is wise. Eating the right low immune-aggravating diet can go a long ways towards impacting your Hashimotos.
So, what are those foods?
Gluten and dairy lead the pack for common proteins that poke a stick at a sensitive immune system, but there could be many others more unique to you. Note that many foods often called, hypoallergenic like rice or quinoa may be actually a problem for you.
Promotes Healthy Blood Clotting
Vitamin K plays a role in healthy blood clotting, and people with a deficiency may experience slow clotting time. This can lead to excess bleeding.
Vitamin K also improves bone density and supports strong bones, reducing the risk of fractures. The recommended daily dose of vitamin K for women older than 19 is 90 mcg a day, and men should have 120 mcg a day. One cup of cooked kale contains 493.8 mcg.

Does Broccoli Affect Thyroid Levels

Foods that contain goitrogens are able to disrupt thyroid function by inhibiting your bodys ability to use iodine. More specifically, goitrogens can block the process by which iodine is incorporated into the key thyroid hormones thyroxine and triiodothyronine .
They also inhibit the actual release of thyroid hormone by your thyroid gland and disrupt the peripheral conversion of the thyroid storage hormone T4 into the active thyroid hormone T3.
In very large quantities, goitrogens can cause a goiter or an enlarged thyroid. They can also act like antithyroid drugs, slowing down your underactive thyroid and potentially causing hypothyroidism.

They are also high in fiber and packed with minerals and vitamins. However, the leaves also contain goitrogenic compounds, albeit in far fewer quantities than the stem and flowers. Humans can easily eat large amounts of goitrogenic compounds because we are far more adept at digesting and processing these foods, whereas turtles have a far more sensitive thyroid gland than humans do.
Broccoli leaves are certainly safer than the stems and flowers and may have a few benefits to turtles, but its probably best to leave these out of your turtles diet altogether or offer them as occasional treats only.

Too Much Of A Good Thing
The problem with cruciferous veggies is that they contain goitrogens, which are substances that affect the thyroid gland. Specifically, goitrogens mess with the thyroids ability to take in the essential mineral iodine. Your body needs it to produce thyroid hormone. Experts agree that cooking eliminates at least some of the goitrogenic substances in broccoli but just how long to cook cruciferous veggies remains a bit unclear. Dr. Andrew Weil proposes that even a light steaming will deactivate most of the glucosinolates in broccoli, however nutrition expert Chris Masterjohn proposes that to remove 90 percent of the goitrogens, cruciferous vegetables need to be boiled for 30 minutes. According to Masterjohn, fermenting broccoli and other cruciferous vegetables actually enhances their goitrogenic actions.

Overall, its important to look at the diet as a whole rather than avoid foods that have a lot of health benefits. It is very good for the diet to be diverse and to include different foods in order to ensure that you are getting all the nutrients you need in order to heal. For example, eating broccoli every single day and avoiding other vegetables is not a good idea. If for one week, you include broccoli, carrots, zucchini, and mushrooms into your diet, the next week change these vegetables and try foods like spinach, spaghetti squash, cabbage, and sweet potato.

Does Kale Lower Thyroid Hormones
There are very few human studies like this one that measures how the thyroid is affected by crucifers.
Of the available evidence, there is very little to suggest that foods like broccoli upset natural hormone balance and thyroid health.
In this study involving the University of California, researchers concluded that though collard greens, Brussels sprouts, and some Russian kale contain enough goitrogenic compounds to potentially decrease iodine uptake, thats not true for all cruciferous vegetables. The researchers found that turnip tops, broccoli, broccoli rabe, and kale contain less than 10 mol of goitrogenic chemicals per serving of 100g, concluding that those foods can be considered minimal risk.
In another small study, participants were given 150g of Brussels sprouts daily for 4 weeks. Even though these sprouts contained a super high 220 mg per 100 g. of sulfurous chemicals called glucosinolates, they did not affect thyroid function. Measurement of thyrotrophic hormone, thyroxine and tri-iodothyronine in the study subjects was unchanged. The researchers believe this was because the Brussels sprouts were cooked and produced myrosinase, an enzyme that helps to deactivate the glucosinolate levels.

Cruciferous Vegetables Like Broccoli And Cauliflower
